Pancakes...for Supper


Mac helped(?) by serenading us while we cooked. Is this really helping?
Well, actually, I love to listen to his music, so, YES!
Look at those 'cakes!

Collin and Abigail set a pretty table,
and we all at until we were full!
And the best part is, we have all of these leftover for breakfast in the morning.
Too bad there was no bacon left!

Golden Multi-grain Panacakes (No misspelling here, that's what Abigail calls them!)

3/4 c. whole wheat flour
1 c. all-purpose flour
1/4 c. cornmeal
1/2 c. old-fashioned oats
1/4 c. wheat germ
1/2 c. almonds
1/2 c. walnuts
1/2 c. pecans
1 tablespoon baking powder
2 c. reduced fat buttermilk
2 eggs
1 1/2 tablespoons honey
1 tablespoon vegetable oil
non-stick cooking spray

In a mixing bowl, combine flours, cornmeal, oats, wheat germ, nuts, and baking powder. In a separate bowl, combine buttermilk, eggs, honey, and vegetable oil. Stir until smooth. Add wet ingredients to dry ingredients, stirring until a smooth batter forms. Spray a griddle or skillet with non-stick cooking spray. Cook over medium heat in skillet, or 350 on griddle. Pour 1/4 c. batter for each panacake ;0) onto the hot griddle. When bubbles form and pop, flip panacake
over with spatula and cook the other side for an additional minute. Serve immediately with butter and syrup! (I hold my in a 200 degree oven until they are all done so that we may all eat together.

This is a very HEARTY recipe. I make three batches at once. We have seven very big eaters, and still have lots of leftovers. This is also a diabetes- friendly recipe.

I LIKE these, and I haven't even tried them yet! Plain white pancakes are so boring, and I really like the healthy aspect of these. Anyone in your family diabetic? Our oldest is Type I and has been for almost 13 years.
I will be trying these soon. Thanks for posting the recipe.

My dad was recently diagnosed, but doesn't live close to us. No one else is diabetic. Mmm... they are good! And, you are welcome for the recipe!

Ashley called them "patti-cakes" when she was a baby...and sometimes she still does! LOL! Sixteen years old and she still likes to be the baby sometimes. I think she just likes being loved on and petted like the baby sometimes,they all do and that is just fine with me!I love holdin' my babies no matter how big they are!
Allen is the official "patti-cake" maker in our home,he loves to make them,that and french toast. :-)

A pancake serenade: I love it. Flapjacks are always our last resort food. The kids will eat it when all else fails, so we've had many a lovely meal after a good old pancake flippin'.

Wonderfully put. It made me warm to read this entry.
