What's for Supper? Linguine with Salmon Sauce

Yes, this sounds a little strange, but oh is it ever delicious! And did I mention, easy? Seriously, 15 minutes is all it takes! This is a real crowd pleaser.


Linguine with Salmon Sauce

2 cloves garlic, minced
1/4 c. butter
1/4 c. olive oil
1 tsp. coarsely cracked pepper
1 can salmon
clam juice
lemon juice
1 pound linguine, or thin spaghetti, cooked
2 Tbls. chopped parsley

Saute garlic in butter and olive oil until lightly browned ; add pepper. Measure 1/3 cup lemon juice , and 2/3 cup clam juice into measuring cup. Drain liquid from salmon. Flake salmon; add with liquids to garlic mixture. Bring to simmer; just before serving over linguine, stir in parsley.
I double this for our family of seven.

This recipe sounds yummy!I think Allen would love it and Ash...both big salmon fans. Ally and Austin,not so much..but what do they know!lol

You may fix this for my birthday...that and homemade carrot cake! ;-D

Is clam juice a must, or can it be replaced by something else?

Anna,
You could leave out the clam juice, and substitute the liquid that the salmon was packed in. I hope that this helps!

Found you thru Becky's site. Have copied and pasted your simple salmon recipe into word and will have a go at that when I want something in a hurry. Have a similar recipe myself with tinned salmon and pasta but will see how this one compares.

I've only used canned Salmon once, and it was so full of bones that I have not used it since. Have you had this problem? Does the brand matter?

I would really like to make this receipe. Maybe I'll brave the Salmon.

Yes, you are right, the canned salmon IS full of bones. BUT they are very soft, and you can EASILY crush them as you flake the salmon! Even the vertebrae, just pinch them between you fingers. Actually, they are a wonderful source of calcium, and once crushed you never know that they are there. I hope that this helps.
