Pumpkin Chocolate Chip Muffins and Carol

Yes. That's what the title said. Pumpkin and chocolate chip. Sound odd? It's delicious! These are so moist, and filling. You really must try them!


Pumpkin Chocolate Chip Muffins

4 eggs
2 c. sugar
1 15 or 16 oz. can of pumpkin
1 c. oil
3 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
2 c. (12 oz.) chocolate chips

In a large bowl beat eggs, sugar, pumpkin, and oil until smooth. Combine flour soda, powder, salt, and cinnamon. Slowly add to pumpkin mixture. Fold in chocolate chips. Grease muffin tins. Bake at 400 for 16-20 minutes.


WHERE IS CAROL?

You may recall that I held a contest to win an apron. Carol from Christian Women Online Blog won. The problem is that I haven't heard from her since I completed the apron. Oh dear! I can't leave her a message because this blog is written by lots of women. I don't know if she reads all of the comments or not. She doesn't have a personal blog that is active. Well, at least not on Blogger. But Randi let me know how to find her at Typepad. See comments!

Does anyone know how to get in touch with her?

Perhaps she is on vacation.

Perhaps she is sick.

Perhaps she saw the pictures of the completed apron and thought that it was hideously UGLY and doesn't want to claim it. Oh my. I do hope that she is well.

Update: Carol has contacted me and her apron is in the mail!

It's 7am and I slept in til 6:45..odd for me. To go along with my cup of steaming hot coffee a scone would go so nicely. Just put a really big one here on this pretty plate..wonchaplease? Yum.

I have to make these.

I hope you hear from/about Carol soon. But if not, I'll gladly take her place. The apron is *lovely* and was made with love. :o)

I have also made these using soy flour and Splenda. They turned out fine. Thought that you might be interested since you are "watching". Have a great trip to the beach!

It's a strange combination, but it works! I tried it in a loaf bread recipe, and it's really good! My recipe is a little different, so I'll give yours a try, too. My family loves anything pumpkin, and chocolate.
I hope Carol responds. It was so sweet of you to make it so quickly for her.

Also, I think pumpkin bread is the best. I'm sure that if you add chocolate chips, it can only be better. I'll be adding this to my recipe collection.
