Mock Crab Cakes






This is the first of many zucchini dishes that I'll be sharing the recipe for. And it is truly so good that you will think that you are eating crab. Really. Try it!





Mock Crab Cakes

2 c. zucchini, grated
1 small onion, grated
1 c. bread crumbs
1 tsp OLD BAY seasoning
1 egg, beaten
1 Tbls mayonnaise

Combine all ingredients. Form into patties, and fry in a small amount of shortening or butter for 3 minutes per side. Easy. Delicious!

Those do look good and I was thinking that I would make some until I saw the shortening or butter. We can't do that. Getting old stinks!

BTW, when you go to your neighbors bearing gifts of zuccinni you should give them the recipe too. They will love you for it.

Try spraying the pan with some PAM. That should work just fine!

I use a similar recipe, Tracy, and it really IS good. As an almost lifelong vegetarian, I'm always looking for creative, simple and delicious veggie dishes. Yum!
