Sausage Zucchini Boats


Here's a recipe that I made up two years ago when Verne accidentally planted 29 zucchini plants.

Sausage Zucchini Boats

3 medium zucchini
1 pound bulk sausage
2 eggs, beaten
2 c. cheddar cheese
1 Tbsp. mustard
bread crumbs

Brown sausage. Drain grease. Run cooked sausage through the food processor to crumble finely. Place in a bowl. Add eggs, cheddar cheese, and mustard. Mix well.

Slice the zucchini, lengthwise. Scoop out the seeds with a spoon. Spoon sausage mixture into the zucchini boats. Place the boats in a greased baking dish. Sprinkle with bread crumbs. Bake at 350 F for 40 minutes, until zucchini is tender. Sprinkle a little more cheese on top, and bake 5 minutes more.

Those look really good! I cracked up at the part where Vern "accidentally" planted 29 zucchini plants! How funny. I bet you were feeding the entire state. I know how that stuff produces.

It looks like you came up with some yummy recipes, though. Hope you have a good weekend.

How exactly do you "accidently" plant 29 zucchini plants?? LOL!!!

Thanks for the recipes, I should have accidently planted more zucchini than I did,I only planted one. A squash borer has gotten into my vines and they are dying. Oh well there's always next year.

Several years ago we planted about a 30 ft row of zucchini plants. Yikes! I haven't planted anymore zucchinis since. ;-)
