A Very Zucchini Saturday

Two years ago Verne accidentally planted 29 zucchini plants. I found tons of ways to use this very prolific vegetable. This morning, as sixteen zucchini sat on my counter, I knew that I had to get to work. I am happy to report that two of my neighbors accepted a few of these lovely veggies after Abigail brought five more into the kitchen. Whew! Autumn and I donned our aprons, and she made Lemon Zucchini cookies while I made Zucchini Chocolate Cake. Then I made Sausage Zucchini Boats for supper. I've shared the recipes in several posts below.

Before the zucchini frenzy this afternoon, we put up 4 quarts of green beans. Verne is ecstatic. His harvest has begun! I'm so thankful that he works hard in the garden to provide our family with fresh produce. Our grocery bill goes way down during the summer because we try to eat mainly from the garden.

Tracy, congratulations to your whole family, especially Verne, for your fresh produce!!! Yah! It was quite ironic to see all your zucchini recipes because my husband and I were in our garden tonight and just saw our first zucchini almost ready to pick. Yah! I would like to try out all your yummy zucchini recipes! Thank you so much for sharing them. I always enjoy your recipes.

Oh my goodness, my daughter would be in heaven. She loves produce and the more of it the better. My husband has always wanted a garden, but we just don't have a place for one. He did grow a couple of things when we were first married and in an apartment. He grew up a country boy and missed the harvest of the land. I love getting fresh produce from a friend of mine. He is not doing certain veggies this year due to bugs and critters eating his harvest. Your stuff looks wonderful.

Your garden looks wonderful, Tracy! Too funny about the 29 zucchini plants! LOL I saw Autumn's yummy cookie recipe earlier tonight. I love all your recipes in the sidebar...I was getting hungry looking at them. :0)

Ok, I am TOTALLY impressed now!! We can't grow a garden here due to the deer. Gosh, it's been a struggle to even keep a few flowers in the flower beds!! Enjoy your fresh produce....lucky!!!!

What a beautiful garden! I've only gotten 1 squash out of my little garden, but it's only the first year, maybe next year will be better.

Those zucchini boats look delicious! I will have to try those :o)

YUM!!

I love zucchini, in fact I can't wait to try the sausage recipe. My favorite way to cook them is to just toss them with pasta and olive oil.

I also love spaghetti squash, my youngest sister talked me into cooking one and using it in spaghetti instead of noodles-I have been hooked ever since!
