Proliferation


Our zucchini plants are quite prolific, as usual. This morning, my counter held nine zucchini, waiting to be used. These are so inexpensive and easy to grow, yet I hate to lose even one to waste.

I woke early, donned my apron, and got to work. I made 36 Chocolate Zucchini Muffins, 2 loaves of Zucchini Bread, and one double layer Zucchini Chocolate Cake. (This is, by the way, the most delicious chocolate cake ever, in my opinion.) By early afternoon, I had the cake frosted, and the kitchen cleaned up once again.


There are still two zucchini on the counter, and more in the garden just begging to be picked. If only I could produce as quickly as they do!

I love zucchini and your baked goods look so delicious, Tracy.

Our zuke plants haven't grown as they should the past few years so we opted out of attempting it this year. That's no reason for me to skip baking zucchini goods for my family though. :o) It goes on the to-do list.

I have to share this with you. Last year I used some of our zucchini (the ones we let get too big) for Zucchini Relish. I made I have used it time and again, and even gave it as gifts to everyone. Since I didn't really know what do to with it, I put it over chicken breasts in a 9x13 baking dish, covered it, and cooked at 350 until the chicken was done. Served it with noodles and greens. IT IS THE BEST CHICKEN EVER! It keeps the chicken moist and juicy, while giving it a wonderful flavor! This year I'm attaching a small recipe take to the jars that I give as gifts.

As a side note, we mixed in a little organic top soil around the plants this year and the zucchini are already 4 ft tall. Eric measured last night. I'll have to post some pictures! It's remarkable!

One of the things I dearly miss at the end of summer is the loss of all that wonderful fresh produce from my own garden.

The only thing going crazy right now is my parsley LOL.

What a productive day! All your goodies look so luscious. Do you want some company today? Hm mm? :)

I love Zucchini too and we usually fry it in olive oil with a onion and this is a great vegetable to serve with any meal.

It's also very good to cook in tomato sauce and cover with mozzarella cheese and bake in the oven.

I posted a while back, a recipe for a Zucchini and Summer Squash Casserole with rice that is simply delicious.

This is the first that I have been back to your site since I've been away. It's good to be back in touch with my blogging friends.

BTW, I have a GREAT zucchini quiche recipe on my blog. It's a family recipe from Jason's side, and just fabulous. Never had a zuccini recipe I like better.

My mom used to make chocolate zucchini cake for my birthday. It is always so moist.

I am still waiting, anxiously I might add, for our first zucchini of the season. They're coming but still too small...
