Sunshine in a Jar


We hosted a 5k race this past weekend, with all proceeds going to send the local Boy Scout troop to Philmont next summer. Verne bought loads of bananas and oranges for the finish line. It was a really cold day, and we only had 42 finishers. Guess what that means? Lots of leftover fruit!




I got it into my head that I was going to try my hand at making Orange Marmalade, since I had the oranges anyway. I searched cookbooks and the internet for a recipe, and found that most people have trouble with the marmalade setting. I combined a few recipes, and spent 5 hours in the kitchen last night. I made a triple recipe, and had no idea that it would take me that long to cut up all of those peels!

It's so exciting to hear your lids popping on your jars after all that work! And this morning, I was even more excited when I found my marmalade to be set up, just right!


This was definitely sunshine in a jar on a cold November day! I got 26 half pint jars of marmalade, and a lot of oohs and ahhs over breakfast. Now I need to use up those bananas!

No kidding, Tracy... if you ever are in the mood for a get rich quick scheme, you could have a domestic boot camp. People (like me) would totally pay to come hang out with you for a week to learn how to do this stuff- and even how to THINK of it!

I would be saying, "who wants free oranges?" never would even consider making marmalade!

Just to look at the picture of the toast and marmelade makes my mouth water. I agree with His Girl, I never, ever would have thought of making marmelade. You are truly thinking "outside the box".

I adore marmalade. I have a pantry full (well...12 jars!) of kumquat marmalade from earlier this year. Hmmmm I think that might be my impetus to find some gluten free bread!

Oh yummy! Marmalade is indeed sunshine in a jar. :o) It certainly does bring a deep sense of satisfaction seeing all those jars lined up, doesn't up.

The marmalade is beautiful-almost too pretty to eat-almost. :-)
As for the bananas, wait for them to ripen and then peel them and freeze them-then you can use them in smoothies or if you mash them before freezing, you can use them in muffins, pancakes, or bread.
I love to buy extra bananas just for freezing.
