Sauerkraut
I remember a large crock sitting in the basement for a long period of time, and waiting and waiting for the sauerkraut to be done. I have no large crock, and was happy to learn that the wait would be much shorter, too. Sally Fallon's recipe from Nourishing Traditions is a keeper. It's not the way my mom made it, but it's still delicious!

That looks almost too pretty to eat, but I bet it's delicious.
How fun. I wish my mom would of known how to do it this way, without using the big crocks. Oh the smell... yuck. lol She would leave it in the crocks it seemed like forever, so the whole house smelled of Kraut. yuck! I still have one of her crocks, I let my bro. have one of them. I use mine for an umbrella holder. Smells better than Kraut...lolol. Thanks for sharing.
