Where I've Been



  • In the kitchen, of course! Here's what I have " put up" for winter so far.

  • 3 pounds Carrots, dehydrated
  • 5 ears Corn, dehydrated
  • 5 lbs. dried black beans
  • 8.5 pounds Roma tomatoes, dehydrated
  • 10 pounds pears, dehydrated
  • 40 pounds apples, dehydrated
  • 32 Stoplight Peppers, dehydrated
  • 7 half- pints Blueberry-Lime Jam
  • 7 half-pints Cherry Love Jam
  • 7 half- pints Spiced Rum Peach Jam
  • 8 half-pints Cherry Jam
  • 9 half-pints Strawberry Pineapple Jam
  • 16 half-pints Strawberry-Lemon Marmalade
  • 17 half-pints Blueberry Jam
  • 16 half-pints Peach Jam
  • 15 half-pints Blackberry Jam
  • 19 half-pints Triple Berry Jam
  • 19 half-pints Strawberry Jalapeno Jam
  • 2 gallons Blueberries, frozen
  • 3 gallons Strawberries, frozen
  • 38 half-pints Strawberry Jam
  • 3.5 gallons Blackberries, frozen
  • 3 quarts and 20 pints Dill Pickles
  • 5 quarts and 8 pints Volcano Pickles
  • 7 pints Beets
  • 7 pints Apple Wedges in Cinnamon Red Hot Syrup
  • 5 quarts and 7 pints Tomato Sauce
  • 15 quarts Applesauce
  • 7 quarts Peaches
  • 2 quarts and 1 pint diced Tomatoes
  • 4 quarts and 14 pints Pickled Cauliflower Medley
  • 11 quarts Spaghetti Sauce
  • 14 quarts and 1 pint Tomato Juice
  • 27 quarts and 1 pint Mixed Fruit
  • 36 half-pints Banana Peppers
  • 74 pints Salsa
  • 55 quarts Sweet Corn
  • 61 quarts Green Beans

And I'm baking for the farmers' market several times a week. I've made literally hundreds of jars of jam to sell there, too. Time's a wastin'. Gotta run!

Oh my.... I was starting to get worried about you, but now I see why you were MIA for so long lol:) That is a whole bunch of canning to do.

I had begun to wonder how you are doing, given such a long absence. But oh my goodness....it doesn't look, to me, like you've even had time to breathe!!!!! I feel exhausted reading that impressive list!

Wow, Tracy, you may just be my role model. This is my first year canning solo, I learned last year by helping my mother and grandmother, and I've put up 100 jars of tomatoes, 60 dill pickles, 20 peaches, and a bunch of assorted jams, pie fillings, and apple butters.

I don't can...yet. I do have a vegetable garden and am starting vermiculture for the soil. Do you grow all these things you preserve or do you buy them at markets or pick them at orchards?

We grow much of what I've preserved, but I've also bought or been given to at the farmers' market where I sell baked goods and jams. Several vendors and I barter goods with one another, too.

Excellent work, as always! I assume the girls are well trained. Perhaps I could get a cow or goat or something and we could work out an arrangement between our boys and your girls...? :-D Love it, love it! And well, you'd send food over to the in-laws, right!?! :-D

WOW! Did you do this much canning when your children were little? I want to do this but haven't found the time... yet... hoping to start a garden next year. We do enjoy putting applesauce away for the year- usually 75-100 quart jars. :)

Heather, I didn't can when my children were little. We didn't have a big garden. I've learned so much in just the past several years!

Well, that is comforting! :) Patricia just turned 10 & I'm yet to have a garden but like I said, I'm hoping we can start w/ a small one next year. (Though I tend to do nothing on the small scale!) I was thinking tomatoes & peppers.
