What's for Supper Wednesday

I was suffering from a headache this afternoon, and Autumn made supper. ( I am feeling better after a rest.) This casserole is a real hit. I've made it for new moms, and I am always asked for the recipe!

Chicken and Wild Rice Casserole

Southern Living Magazine September 2000

2 (6.2) pkgs. Fast cooking long grain& wild rice (Uncle Ben’s)
¼ c. butter
2 c. medium onions, chopped
4 celery ribs, chopped
2 (8 oz.) cans sliced water chestnuts, drained
5 cups chopped, cooked chicken
4 cups (1 lb.) shredded cheddar cheese, divided
2 (10 ¾ oz. ) cans, cream of mushroom soup
16 oz. Sour cream
1 c. milk
½ tsp. Salt
½ tsp. Pepper

Prepare rice according to package directions. Set aside. Melt butter in a large skillet over medium heat; add onion, celery, and water chestnuts. Sauté 10 minutes, or until vegetables are tender. Stir vegetables into rice. Add chicken, 3 cups cheese, & next 5 ingredients. Mix well. Spoon mixture into lightly greased 4 quart casserole dish. Bake at 350 for 30 minutes. Sprinkle with remaining cup of cheese. Bake 5 more minutes.

Mmmm, this sounds like pure comfort ... comfort food that is. I just finished dinner. I am alone tonight so it consisted of tortilla chips and salsa and a slice of swiss cheese. Oh, and 3 oreos. I know ... I'm so good to myself.

I sure hope you feel better after your headache.

I hope you're feeling better now, Tracy. What a smart girl you have there. You've trained her well in homemaking.
I like anything with chicken and rice, so I'm going to try your recipe.
Thank you for sharing.
Thank you, too, for your encouraging comments on Ashley's post today. I'm proud of her for sharing her story.

I think my mom makes something like that, sounds familiar. That was sweet of her to make your family dinner. I hope that your head feels better.. I get migraines, so I know how terrible headaches can be.

Thanks so much for your sweet words on my post today, that was really hard for me to share, and everyone has been so supportive, and I thank you so so much.

Hugs,
Ash
