A Week of Menus

Just because you're busy doesn't mean that you can't have a sit down meal with your family. Here's the past week's menu. Easy. Hearty. Satisfying. Best of all, we ate together!



Monday

Salmon with Savory Seafood Rub

Steamed broccoli

Sliced tomatoes




Tuesday
Baked Macaroni and Cheese
Tossed salad


Wednesday
Broiled pork chops
Brown rice
Spinach
Butter Beans


Thursday
Clam Chowder
Crackers
Applesauce

Friday

Grilled Cheese
Tomato Soup


Saturday
Tuna Noodle Casserole
Salad

Sunday
Spaghetti and Meatballs
Tossed Salad
Italian bread


Don't eat ground meat every night. That's not the only way to feed a family on a budget, and even though you can fix it many different ways, it's still ground beef. Mix it up a little! We had beef, pork, pasta, fish, soups, and salads. It's easier on the budget if you have a meat and potatoes type of meal, surrounded by more frugal casseroles, pastas and soups. Variety is the spice of life!

It's so true...we try to mix up the meatier dishes with casseroles, salads, etc. It really does make the budget stretch, but also just gives variety! I need to make a stop over to your recipe blog...haven't been in a while! :)

Your menu sounds yummy, espcially the salmon. Jim and I love Salmon, and we order it alot when we go out to eat but it's really expensive to buy in the stores(at least around here it is) so I've only made it one time. Thanks for the good ideas!

... and, for some days, you can even go completely veggie and do without any meat whatsoever! :)

So yes, I'm a biased vegetarian. But I do think cutting down on meat is both healthy and frugal - and can even add to the variety of your menu.

I love to cook and you are right it is so easy to eat just the plain old ground beef and chicken!

I love clam chowder!! It is finally cooling off enough to eat it here!

I tend to 1/2 the meat in a casserole and add extra veggies, potatoes or pasta. No one has discovered this ;) and everyone likes the food!

Ah, soups. Cook the chicken, debone and put in a casserole. Cook the carcass longer and save the broth. Make a soup one night. Add dumplings another. On and on and on...
