It's Derby Time!


Although I could be happy if I never had to watch another sporting event in my life, I'm married to a man who lives and breathes sports, and somehow, we get along beautifully! Football is on his mind year round. If it's not the pre-season or regular season, then he's thinking about the next year. He was glued to the NFL draft , waiting with bated breath to see who the Steelers would get. Though not as all-consuming, he also follows golf, baseball, hockey, and Nascar. No soccer. Hurray! 

Each year our family is forced encouraged to participate in fun little competitions. We must fill out brackets for the NCAA Tournament, and we have to pick a winner for the Kentucky Derby. This year, Verne and Collin were supposed to be on a Boy Scout camping trip, and I thought we were going to escape. But, no, it was not to be. The trip was cancelled due to heavy rains, and so, tomorrow evening we'll gather around the TV for about 15 minutes, make our predictions and watch the fastest two minutes in sports.  

Collin got in on the action a little early this year. While the girls and I were away at the dress fitting the other day, he took it upon himself to bake a pie, complete with homemade crust. And so, in honor of Collin, and the Kentucky Derby, I present to you the recipe for Derby Pie. Make sure you serve it with vanilla ice cream, as it's very rich!

Derby Pie

2 eggs
1/2 c. flour
1/2 c. sugar
1/2 c. brown sugar
3/4 c. softened butter
1 c. chopped walnuts
1 c. semi-sweet chocolate chips
9" unbaked pie shell

Preheat oven to 325 F. In a large bowl, beat eggs until foamy. Beat in flour, sugar and brown sugar. Beat in softened butter. Stir in walnuts and chocolate chips. Pour into unbaked pie shell. Bake 55-60 minutes or until knife inserted halfway between edge and center comes out clean, and top is golden brown. Cool on wire rack.

derby pie...that's my kind of sport! YUMMMMMMMMM thanks for reminding me of it..it has been forever since i made one.

I make a pie very similar to this - it is delish!

Sorry about the sports thing...in my house my husband could careless about sports...though I grew up in a sports crazy home! It has been a big adjustment for me over the years but now I like it! :)

The pie sounds like the only worthwhile thing in the whole exercise, to me.

My Dh is sports mad. Anything to do with wheels and balls and he's there watching it from go to woe. Cricket season is just painful. At least footy is more restricted to weekends.

While he stays up til the wee hours watching the IPL series we all try to get on with other hobbies. None of the rest of us are sports lovers. Dh thinks I've poisoned the kids....I think he's not sufficiently educated them if he wants them to love sports too.

The stand-off continues LOL.

That pie looks yummy....as I write this my husband and one of my sons is in the other room watching football!!!!
